What's for Dinner?

I've been helplessly running out of ideas as to what to have for dinner lately. This past summer, I did a pretty good job at buying fresh fruits and veggies (organic of course) but now that its the dead of winter, I've really gotten away from buying the fresh stuff and have resorted to feeding my kids lots of processed, convenience foods.

On the advice of a friend, I've been trying to meal plan once a week. Its made dinner time less stressful knowing that I have all the ingredients to make a meal and I've even saved some money on grocery shopping. However, I'm stuck in a rut and sick of the same old meals. You know...spaghetti, tacos, chili, macaroni and cheese, etc.

Ugh...does anyone have any ideas for quick, healthy snacks and meals?

Sounds EXACTLY like us.... exactly!!!!! It's so hard... weather, busy, you name it. I hate the dinner rush and find myself not even enjoying eating! My favorite days are when I use the crockpot. And, I try to keep frozen organic veggies on hand for quick add ons.......

Thanks Nicole! I do love those steamable veggies and my crock pot, but it does take some planning ahead. I'm with ya about not even enjoying dinner. I dread it actually. BUT we need to eat..so I'll continue to seek out healthy and fast meals. THanks!
